Easy Three Kings Cake- Fun for Mardi Gras!
Mardi Gras! Ephiphany! 12th Night! Just a random Tuesday! Are all great reasons to bake this Three Kings Cake Recipe easy enough for beginning bakers to tackle! Honestly… if the thought of fussing with yeast dough makes you cry… dry your tears, and make this cake. Because it uses everyone’s favorite Thanksgiving friend… Refrigerated Crescent Roll Dough (yup, that stuff in a can)… it comes together in a snap, and looks (almost) like a professional made it!
Fill the cake with the smooth and to make Cream Cheese filling.. and you will have people battling for seconds! Whether or not you stick in the raisins (maybe even soaked in rum?) and nuts is up to you. Feel free to substitute Dried Cranberries or even Chocolate Chips. Often a special plastic “baby” will be baked into the cake, and the person who finds it is supposed to get luck for the year (and maybe a trip to the dentist).
Top the cake with a simple white icing… then give it some Mardi Gras flair with colorful icing! Remember, the traditional colors are Purple for Justice, Green for Faith, and Yellow for Power.
Easy Three Kings Cake Recipe
Ingredients
Cake:
- 2 cans Refrigerated Crescent Rolls (16 Triangles total)
Filling:
- 4 oz. Cream Cheese
- 1/2 cup Dark Brown Sugar
- 1/2 tsp. ground Cinnamon
- 1/4 cup Raisins... soaked in hot water or rum for 15 minutes... then drained
- 1/2 cup chopped Pecans
Icing:
- 1 1/2 cup Powdered Sugar
- 3 TBL Milk (4 if needed... )
- 1 tsp. Vanilla Extract
Instructions
- Preheat oven to 350 degrees F.
- Lay a sheet of Parchment paper on a cookie sheet
Start with the filling:
- Put the Cream Cheese, brown Sugar and cinnamon in a food processor, process until combined. Add the raisins and nuts... pulse until mixed through.
- note- you can do this in a mixer... you won't chop the nuts and raisins though, so if you don't want them whole, chop them up before adding.
For the Cake:
- This sounds a bit confusing, but it isn't...
- Lay the crescent roll triangles in a circle on the baking pan. Make sure that the LONG sides are touching each other (overlapping a bit)... and the pointy end goes to the middle. The short side of the triangle will form the outer edge of the circle. Sort of press the seams in the center half of the circle together)
- Now... spread the filling on the inside part of the circle
- (you can hide a bean or a oven-proof token in the filling now)
- Fold the OUTSIDE edge of the circle, one triangle segment at a time, toward the inside.. but not all the way. Bring the inside point up and tuck it under so the filling is covered, and press to seal.
- Work around the circle... Fold in the outside flap, tuck the inside point under it.
- All the way around the circle.
- Bake 20 - 25 minutes... until browned
- Let it cool
Icing:
- Mix all icing ingredients together. It should be the consistency of White Glue. Pour evenly over the cake.
- Before the glaze solidifies... sprinkle the colored sugar over the cake in segments.
