I am making 600 whoopie pies for my daughter’s wedding. Can I make and freeze them ahead of time. Do I freeze them completed with the filling? Or do I freeze the cakes and put the filling in at the time they are served? Will the cakes get moist and sticky if I freeze them?
Ohh Susan.. hope I’m not catching you too late…. I would freeze the whoopie pies without the filling. Freeze them on baking sheets, and when they are frozen you can box them airtight with wax paper between the layers.
Thaw them on racks. Then fill.
HOWEVER…
As these are made with a cream cheese buttercream, it won’t be the end of the world if they are frozen already assembled. If you can thaw them in the fridge, not touching each other, it should be ok.
